  We will make Gulab jamuns from whole dry milk.         lets make sugar syrup first     we will need a good amount of sugar syrup here   so when we dip our gulab jamuns in the syrup the jamuns should be soaked well in it           stir on high flame to melt the sugar   sugar has melted coz i have cooked for  4-5 minutes   we need a sticky syrup   pinch of saffron was soaked in one tbsp water     this is optional         click the i button on the  top right to watch the recipe of cardamom powder   mix well the syrup is ready as you can see the stickiness   put off the flame and set aside lets start making Gulab Jamuns now 250 gms whole dry milk or reduced dry  milk  

 This is home made i am giving you the link on the i button up               we will use it little by little make a dough by pressing softly           if you use baking soda then just use a pinch of it only   make a dough which is neither too soft nor too hard   make it sticky by adding 1 to 2 tsp water       This is how we want it to be     if you feel the dough is hard add water accordingly   heat oil on a low flame       Take this size of ball put a little pressure to make the balls so that no cracks are visible on the balls     we will make this type of long Gulab Jamuns you can make round balls if you wish   i have made eleven Gulab Jamuns here if you are making small Gulab Jamuns you can make around 20-25                      

 The oil is hot and i have lowered the flame     lets check if the temperature is enough or not to fry the Gulab Jamuns   lets make a small ball and put it in the oil to check whether the oil is perfect for frying as you can see the bubbles are rising and the ball is coming up slowly   this is perfect temperature we can fry the Gulab Jamuns now     lets fry in small quantities   do not touch them now or else they can break   just circle the oil around without touching them   keep the flame low otherwise they will not cook from inside   gradually stir till they are golden   it has taken 8-10 minutes to fry them evenly         they are perfectly golden remove and dip them in sugar syrup   the sugar syrup should be warm at this point and not hot     keep them soaked in the syrup for 2 hours   lets check   They are perfectly fluffy and ready to serve

ingredients Of Gulab Jamun

  • 100 Gram Khoya (firmly packed)
  • 1 tbsp Refined flour or soojee
  • 1/4 tsp Baking soda
  • 2 cups Sugar
  • 2 cups Water
  • 2 tbsp Milk (mixed with a little water)
  • 4 Green cardamoms (slightly crushed)
  • Ghee
  • Cube of bread
